Delicious Veggie Joes
Hi, it’s Darby from the Golden Pear, Queensbay favorite gourmet deli and coffee shop. Joan asked me to provide some recipes for her Queensbay blog, and I am happy to oblige. Enjoy!
- 2 Tbsp olive oil
- 3 jalapeño peppers, seeded and chopped
- 2 red bell peppers, chopped (you can substitute green or yellow)
- 1 large sweet onion, chopped
- 4 garlic cloves, minced
- 4 (15 oz) cans black beans, drained and rinsed (puree one of the cans in the food processor)
- 2 tsp cumin
- 2 tsp ground coriander
- 1 Tbsp chili seasoning (the kind in the packet)
- 1 Tbsp Hamburger seasoning
- 1/2 tsp seasoning salt
- 2 (15 oz.) cans diced fire-roasted tomatoes with garlic
- 1 Tbsp brown sugar
- 1 Tbsp molasses
- 2 Tbsp Worcestershire sauce
- 1/2 cup grape-nuts cereal
- 1 lime (juiced)
Heat a large skillet on the stove top and add the oil. Sauté the peppers until they are tender. Add the remaining ingredients except the lime. Mash the ingredients like you would homemade mashed potatoes until the tomatoes are crushed. Simmer the mixture for a couple of minutes or until it resembles sloppy Joes made from ground beef. This will take about 15 minutes. Add the juice of one lime, stir it into the mixture and serve.
